This week's feature is the Papaya Salad from Pho 888.
Pho 888, 520 West Side Ave, is a relatively new Vietnamese restaurant in Jersey City and when I recently stopped by, I was craving something light but flavorful. Cue the papaya salad with shrimp and shredded barbecue pork.
With a giant pile of papaya, some thinly-sliced red onions, jalapenos, and a lot of lime and a fish sauce-reliant house sauce, this dish hits every flavor note - it's sweet, citrusy, sour, a little spicy, a little briny, fresh and with some slightly smoky richness. The crunchy shallots, tender shreds of pork and shrimp, and crisp papaya create a mix of textures that help layer all the flavors together to create a bright, sharp, refreshing and satisfying dish that will liven up your tastebuds. At $13 with more than enough for leftovers, this is a good deal and a meal you'll remember.
