Gringo's Taqueria Opening Soon



Gringo's Taqueria, 12 Coles Street, is planning to open their doors to the public by the end of June after several months of construction.

Led by Darren Conway and Rebecca Tarantino of RWay Group, known for Pier 13 and Lulu's Lounge at the W in Hoboken, Gringo's will be a casual taqueria spot with outdoor seating and a full bar. With the kitchen led by partner and Jersey City local, Chef Rick Truocchio, the group has also brought in Chef Joe Francis, another local who's worked all around Jersey City - everywhere from Union Republic to The Corkscrew to recently, 9th & Coles. They've been busy menu testing for months and there's a big focus on keeping everything as homemade as possible including the tortillas, the hand-ground and seasoned chorizo, and the seven different salsas they'll have on offer. They're also intent of offering several creative vegetarian/vegan options including a sous-vide carrot & charred cauliflower taco.


The restaurant is going for a low-key vibe with a lot of local Jersey City touches - like the former food truck that used to be parked outside of the space has now been worked into the interior to form a window into the kitchen. There will be outdoor seating and a take-out window in the back along with a bar inside that will have a heavy focus on tequila although initial conversations with the owners indicated they weren't interested in becoming a party/late-night spot especially since the restaurant sits across the alley from a number of residences.
